Vegetable-Curd Raita
Ingredients:
1/2 cup plain yogurt (curd)
¼ cup cucumber (finely chopped)
¼ cup tomato (finely chopped)
¼ cup onion (finely chopped, optional)
¼ cup grated carrot (optional)
1 tablespoon fresh coriander leaves (chopped)
¼ teaspoon roasted cumin powder
¼ teaspoon black salt (or regular salt to taste)
¼ teaspoon red chili powder (optional, for mild heat)
A pinch of black pepper (optional)
½ teaspoon lemon juice (optional, for added tanginess)
Directions:

In a small bowl, whisk the yogurt until smooth. If it's too thick, add a little bit of water
or milk to achieve a creamy consistency.
Finely chop the cucumber, tomato, onion (if using), and grate the carrot (if using).
You can also add a bit of finely chopped mint for an extra refreshing touch.
Add the chopped cucumber, tomato, onion, and carrot to the yogurt. Stir everything
gently until well mixed.
Add the roasted cumin powder, black salt (or regular salt), red chili powder, and black
pepper (if using).
Adjust salt and spices to your taste.
If you prefer a tangy kick, add a little squeeze of lemon juice.
Garnish with freshly chopped coriander leaves and give the raita a final mix.
