Tofu Salad

Ingredients:

100 grams tofu

½ cup mixed salad greens (lettuce, arugula, spinach, etc.)

¼ cup cucumber, diced

¼ cup tomatoes, diced or cherry tomatoes halved

2 tablespoons red onion, thinly sliced (optional)

1 tablespoon carrots, shredded

1 tablespoon bell pepper, diced

1 teaspoon olive oil

1 teaspoon lemon juice (or vinegar)

Salt and pepper, to taste

½ teaspoon roasted sesame seeds or crushed peanuts (optional topping)


Directions:


Pat dry the tofu with a paper towel and cut into small cubes.


In a bowl, combine salad greens, cucumber, tomatoes, onion, carrots, and bell peppers.


Whisk together olive oil, lemon juice, salt, and pepper.


Add tofu cubes to the salad bowl.


Drizzle dressing over the top and toss everything gently to combine.


Sprinkle roasted sesame seeds or crushed peanuts for crunch
