Ingredients:
1 cup fresh spinach leaves, washed and roughly chopped
½ small onion, finely chopped
1 small garlic clove, minced
1 teaspoon coconut/ sesame oil
1 cup water or vegetable broth
¼ cup milk (optional, for creaminess)
¼ teaspoon black pepper
Salt, to taste
A pinch of nutmeg (optional, adds a warm flavor)
Yogurt, for garnish (optional)
Directions:
Heat oil in a small pan.
Add onion and garlic, and sauté until soft and translucent.
Add chopped spinach and sauté for 1–2 minutes until just wilted.
Add water, salt, and pepper. Simmer for 2–3 minutes.
Turn off the heat. Let it cool slightly
Then blend until smooth using an immersion blender or a regular mixer.
Return the soup to the pan. Stir in milk if using, and gently reheat (don't boil after adding milk).
Taste and adjust seasoning. Add a pinch of nutmeg if you like for a cozy touch.
Serve hot, garnished with a swirl of yogurt!
