Ingredients:
2 eggs
1 tablespoon milk or water (optional — makes them softer) Salt, to taste
Pepper, to taste
1 teaspoon butter or oil
Optional extras: A pinch of chili flakes, chopped herbs (parsley, chives), or grated cheese
Directions:
Crack the eggs into a bowl.
Add milk/water, salt, and pepper.
Beat lightly with a fork or whisk — just until mixed (don’t overbeat).
Heat butter in a nonstick pan on low to medium heat.
Pour in the eggs.Let them sit for a few seconds without stirring.
Using a spatula, gently push the eggs from the edges to the center.
Keep gently folding and stirring until you see soft curds forming.
Turn off the heat just before fully cooked — they’ll finish cooking with residual heat (so they stay soft and creamy).
Serve immediately! You can top with herbs or a little cheese if you like.
