Quinoa Upma

Ingredients:

1 cup Quinoa

¼ cup Onion

¼ cup grated Carrot

¼ cup Green beans

¼ cup Green peas

½ inch grated ginger

½ tsp Chana dal

½ tsp Urad dal

1 tsp Ghee

½ tsp Cumin seeds

1 pinch Turmeric

1 pinch Hing (Asafoetida)

Salt to taste


Directions:

Soak 1 cup of Quinoa overnight or at least for 2 hours.

Wash the soaked quinoa by rubbing it with fingers.

In a pan, add ghee. Once it is heated, add cumin seeds, urad dal, chana dal,

Next, add grated ginger and all the chopped vegetables and mix well.

Once cooked, add hing, turmeric and salt and stir the mixture

Add 1.5 times as quinoa to the saucepan and cover it with a lid.

Let it cook on a medium to low flame until the quinoa becomes transparent.

Serve hot.
