Ingredients:
¼ cup quinoa (rinsed well)
2 tablespoons masoor dal (red lentils)
¾ cup water (adjust to your desired consistency)
½ small onion, finely chopped
1 small tomato, chopped
¼ cup mixed vegetables (like carrot, green peas, beans)
½ teaspoon cumin seeds
¼ teaspoon turmeric powder
½ teaspoon ginger, finely chopped
1 small green chili, chopped (optional)
½ teaspoon ghee or oil
Salt, to taste
Fresh coriander leaves, for garnish
Directions:
Rinse quinoa and masoor dal separately until the water runs clear. You can soak dal for 10 minutes if you want faster cooking.
Heat ghee in a small pressure cooker or a deep pan.
Add cumin seeds. Let them splutter.
Add ginger and green chili, sauté for a few seconds.
Add onions and sauté until translucent.
Add tomatoes and cook until soft.
Toss in mixed vegetables. Stir for a minute.
Add rinsed quinoa and masoor dal. Mix well.
Add turmeric powder and salt. Stir everything together.
Pour ¾ cup water. Mix well.
Pressure cook for 2 whistles or cook covered in a pan on low flame for 15–18 minutes, until quinoa and dal are soft.
Once done, fluff it lightly and garnish with fresh coriander leaves
