Ingredients:
¼ cup cooked chickpeas
1 tablespoon tahini (sesame paste)
1 tablespoon olive oil (plus more for drizzling)
½ tablespoon fresh lemon juice
1 small garlic clove (minced)
¼ teaspoon ground cumin Salt to taste
1-2 tablespoons water (adjust for desired consistency)
A pinch of paprika or ground cayenne (optional, for garnish)
Fresh parsley or cilantro (for garnish, optional)
Directions:
Soak chickpeas overnight. Pressure cook them until tender and soft, drain and rinse them under cold water. In a food processor or blender, combine the chickpeas, tahini, olive oil, lemon juice, minced garlic, cumin, and salt.
Blend until smooth. If the mixture is too thick, add a tablespoon of water at a time until you reach your desired creamy consistency.
Taste the hummus and adjust seasoning as needed. You can add more lemon juice for tanginess, more garlic for extra flavor, or more cumin for depth.
Transfer the hummus to a small bowl, drizzle with olive oil, and garnish with a pinch of paprika or cayenne pepper. You can also add some chopped parsley or cilantro for a fresh touch
